Chocolate Zucchini Brownies, Applesauce Bread, and Lemon Bread are 3 of my Old Time FAVORITES! Even though I eat a Raw food diet, once in a while, I get a craving for something OLD FASHION such as a really good, down home chewy gooey chocolate brownie. But not your traditional, fattening, sugar laden brownies! If I am going to splurge, I am going to try to do it as healthy as possible, so I have modified this recipe below to be a “healthier” Chocolate Brownie” that is guilt free, or almost guilt free! chocolate brownies

Chocolate Zucchini Brownies

Healthy Chocolate Zucchini Brownies made with zucchini, bananas and applesauce, yielding a brownie with only 120 calories, 2 grams of fat, and a whole bunch of vitamins and minerals, and egg free.

1/2 cup applesauce
2 small or medium bananas mashed
1 1/2 cups coconut sugar (can use 1 cup for a less sweet brownie)
2 tsp. vanilla extract
1/2 cup cocoa powder
1 1/2 tsp. baking soda
1/2 tsp salt
2 cups finely shredded zucchini
2 cups Gluten Free Flour (*See Below for Recipe)
1/2 cup walnut pieces

Preheat oven to 325 degrees F. Grease and flour a 9×13 inch baking pan. In a large bowl, mix together the applesauce, mashed bananas and sugar. Add vanilla and cocoa and mix. Then add baking soda, salt, and zucchini and mix. Add flour and walnuts and mix together. Spread evenly into a prepared pan. Bake for 25 minutes, or until brownies spring back when gently touched.

Applesauce Bread

This is so simple to make and smells so delicious as it bakes!
I make my own applesauce from scratch just before I make these!


1/2 cup of coconut oil
1 large egg
1 1/2 t baking soda
3/4 t nutmeg
1 cup coconut sugar
1 1/2 cups of Gluten Free flour mix (* See Below for Recipe)
1 t ground cinnamon
1/2 t pink Himalayan salt
1 1/2 cups of fresh homemade applesauce
1 t of pure vanilla extract

Preheat oven to 325 degrees.

In a large bowl, first blend together the oil, egg, & sugar.
Then add the flour, baking soda, spices, & salt.
After it starts to from a crumbly dough, pour in the applesauce and mix together.

I used two small loaf pans, pouring mixture evenly into both.
I use coconut oil to grease my pans, or you could use parchment paper, depending on the dish you choose to bake them in.

Bake at 325 degrees for about 40 minutes.

Oooh they smell SOoo good!!

They come out moist with just the right amount of spice!

1 1/2 cup(s) Gluten Free Flour Mix (*See Below for Recipe)

1/2 tsp Baking Soda

1/2 tsp aluminum free baking powder

1/2 tsp pink Himalayan salt

3 eggs

1 cup coconut sugar

1 tsp vanilla

1 tsp lemon extract

1/3 cup(s) lemon juice

1/2 cup + 2 TBS coconut oil

Combine flour, baking soda, baking powder and salt in a bowl.
Use a mixer to blend together the eggs, sugar, oil, vanilla, lemon extract and lemon juice in a medium bowl.
Pour wet ingredient into the dry ingredients and blend until smooth.
Add oil and mix well.
Pour batter into a well greased 9×5-inch loaf pan.
Bake at 325 degrees for 45 minutes or until a toothpick stuck into center of the cake comes out clean.

You can make your own lemon icing if you should want icing.
When the loaf is cool, remove it from  pan and frost the top with the icing.
Let the icing set up before slicing. I personally do not frost anything to cut out down on calories!

Gluten Free Flour Mix


  • 1 C white rice flour
  • 1 C oat flour
  • 1 C coconut flour
  • 1 C tapioca flour/starch
  • 1/4 C arrowroot starch
  • 3 tsp. finely ground Chia Seeds


  • Combine all ingredients together and make sure they are mixed well. Store in an airtight container and use as flour in any baking recipe. 1 Cup of Gluten Free Flour equals 1 Cup white Flour.
  • I like to store my mix in the freezer.
